Recipes...YUM-O!



I guess it was not fair to post my Butternut Squash Bread AND my Pumpkin cheescake WITHOUT the recipes. (Banana Walnut bread can be found in ANY cookbook or online.)

Here is the Butternut Squash Bread recipe. (Instead of pumpkin I added Squash. Did you know that Squash is sweeter than pumpkin?)

INGREDIENTS (Nutrition)
3 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground nutmeg
2 cups solid pack pumpkin puree
1 cup vegetable oil
1/2 cup chopped walnuts (optional)
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
3 cups white sugar
2/3 cup water
4 eggs


DIRECTIONS
Grease and flour three 7 x 3 inch pans. Preheat oven to 350 degrees F (175 degrees C).
Measure flour, sugar, baking soda, salt, and spices into a large bowl. Stir to blend. Add pumpkin, water, salad oil, eggs, and nuts. Beat until well combined. Pour batter into prepared pans.
Bake for approximately 1 hour.

Do YOU even know how to bake your Butternut Squash? Here's how:
Slice the Squash in half. Scoop out the seeds. Put some butter, salt, pepper and some brown sugar on both halves of squash. Place in a 350 degree oven and allow to cook for about an hour. Remove from oven. Then carefully with a knife remove cooked squash from shell. Now you are ready to use it to make Squash Bread!!! YEAH!

I have seem to have misplaced the Pumpkin Cheesecake recipe. I'll post that when I find it. Happy Baking Monday! (I'm going to decorate Halloween Sugar cookies with the KIDDOS! :)

That looks incredible. I don't use squash as much as I would like to. This would be great to try.
